Chocolate Oatmeal Cookie Cake RECIPE

Prep Time: 20 minutes

Bake Time: 30 minutes

Rest Time: 20 minutes

Slices: 1 - 24 slices of joy!

Equipment

  • 9inch springform round pan

  • weighing scale

  • large mixing bowl

  • stand mixer

  • spatula

Ingredients

  • 150g oats/porridge

  • 1 cup/120g all purpose flour

  • 2tbsp/8g cornstarch

  • 1tsp/5g baking soda

  • 1/2tsp/2.5g salt

  • 1tbsp/15g ground flaxseed + 45ml warm water

  • 1 large egg yolk

  • 6tbsp/84g margarine/vegetable shortening

  • 6tbsp/84g unsalted butter

  • 3/4 cup/150g light brown sugar

  • 1/2 cup/100g granulated sugar

  • 2tsp/10g vanilla extract

  • 1 1/2 cups/240g chocolate

Instructions

1. Preheat the oven to 350°F, 180°C. Line a 11 inch spring form pan.

Mix your flax seed and water together in a small bowl and set aside.

Weigh, sieve and add flour, oats, cornstarch, baking soda and salt into a large bowl, mix through and set aside.

Cream your butter, margarine and sugars together until light, creamy and fully combined.

Add your flax seed and egg and mix through. Then add your dry ingredients and your chopped chocolate or chips.

I like to add a mixture of my favourite chocolate here, chocolate buttons, dairy milk, galaxy and dark chocolate.

Pour your batter into your tin and level it out. Add a few more pieces of chocolate to the top and press it in.

Bake for 30 minutes until just about set. Let it cool in the tin for about 20 minutes before adding frosting or just slicing.
