Toffee Crisp Biscuit Bars

I think about Toffee Crisp chocolate bars a little too often! If anyone doesn’t know what a toffee crisp is, it’s basically Rice Krispies engulfed in delicious homemade toffee and coated in chocolate... sounds simple enough but that doesn’t make it any less than perfection! 

My version is a little different and I’m adding a shortbread biscuit base because I have an addiction to adding shortbread bases to any and all of my desserts, if possible! 

This is a pretty easy and quick recipe, perfect for doing with little ones or for a last minute party, try it out and let me know what you think!

Toffee crisp Biscuit Bars recipe

⏲ PREP TIME: 20 minutes

⏲ BAKING TIME: 15 minutes

⏲ RESTING TIME: 1-12 hours

EQUIPMENT

  • 9 x 9 baking dish

  • sieve

  • mixing bowl

  • spatula

  • food weighing scale

  • non stick saucepan

  • whisk

INGREDIENTS

SHORTBREAD BASE 

  • 1 3/4 cup/210g all purpose flour

  • 1tsp/5g baking powder

  • 10tbs/140g unsalted butter

  • 1tsp/5g vanilla extract

  • 3/4 cup/75g super fine/caster sugar

  • 1/4 tsp/1.25g salt

Toffee crisp

  • 1 cup/200g dark brown sugar

  • 2 1/2 cups/100g Rice Krispy cereal

  • 3 tbsp/42g unsalted butter

  • 1 can/397g sweetened condensed milk

  • 1tsp/5g vanilla extract

  • 1/4tsp/ 1.25g salt

CHocolate top

  • 1 cup/210g chocolate (I do a mix of semi-sweet and milk)

  • 1tsp/5g vegetable oil

INSTRUCTIONS

SHORTBREAD Base

1.

Preheat oven to 350°F, 180°C. Grease and line a 9 x 9 inch baking dish.

2.

Sieve flour, baking soda, brown sugar and salt into a large mixing bowl and give it a quick mix.

3.

Add your room temperature butter and roughly combine all the ingredients with spoon until fully incorporated.

Throw the mix into your pan in an even layer and using your hands press it down, starting from the corners and working your way in.

Use the back of a spoon to level out the surface and prod the whole thing with a fork to reduce puffing as she bakes.

Bake in the oven for roughly 15 minutes until the top is no longer shiny and edges are starting to crisp/turn brown.

Make your toffee crisp filling while the shortbread is in the oven.

Toffee Crisp Filling

1.

Add butter, sugar and condensed milk to a heavy based saucepan.

Heat on medium/low until the sugar has completely dissolved and you get that beautiful caramel colour, stirring it often to prevent burning/sticking.

Turn off the heat and stir in your vanilla, salt and Rice Krispies. Make sure to coat all of them.

4.
Spread your toffee crisp over your shortbread and even with the back of a spoon.

Chocolate Top


Melt your chocolate and oil in the microwave. Mix at 20 second intervals, heating for about 60-90 seconds, until it’s silky smooth.

Pour onto your toffee crisp and smooth out with a spatula or spoon and leave to set for at least an hour, and up to over night, before slicing.
