Butterscotch Sauce
Now that it’s officially geansaí* season, I thought I’d share my simple yet deliciously decadent butterscotch sauce recipe!
It’s honestly harder to find something butterscotch doesn’t go with. Pies, cakes, cookies, cupcakes, ice cream, and my personal favourite, simply a spoon. It’s the perfect addition for all your holiday treats and just cosy nights in by the fire!

EQUIPMENT
heavy bottomed saucepan
mixing bowl
food weighing scale
measuring spoons
whisk
mason jar + lid
INGREDIENTS
200 grams dark brown sugar
40 grams light brown sugar
3 tbsp 45 grams unsalted butter
240 mls/ 1 cup heavy cream
1 tsp/ 5 grams salt
1 tsp/ 5 mls vanilla extract
1 tbsp/ 15 mls butterscotch schnapps
INSTRUCTIONS
1.
Weigh out and get all of your ingredients together before starting.
2.
Melt butter, on medium, in a heavy bottomed saucepan until almost fully melted.
3.
Add sugar, salt and heavy cream, mix through, and let it sit on medium/high.
4.
I let this simmer for 8-10 minutes, mixing it with a whisk every so often.
5.
Take off the heat and add the vanilla extract and butterscotch schnapps and mix through.
6.
Pour into a glass jar or container and let it cool. It will thicken while cooling. Store in refrigerator for up to a month, if it lasts that long!
